Elderflower cordial

Here in Oxfordshire the sun finally began to shine and the elderflowers have begun a tad later this year to flower.  As usual I rush out to begin to make the first elderflower cordial so that by the last flush of flowers I am out there again making some in reserve for later in the year.

 And in such a short space of time, you have ready your home made elderflower cordial...

Elderflower cordial making is so simple and easy and yet feels such a decadent thing to have in the house, I look forward to making it every year.

In case you are tempted you will need:

20 elderflower heads
1.2l water
1.8kg sugar
2 lemons
75g citric acid
