Syltkaker
♥ 1 cup unsalted butter
♥ 3/4 cup sugar
♥ 1 large egg
♥ 3 cup plain flour
♥ 1/2 tsp salt
♥ 2 lightly beaten egg whites
♥ 1/2 cup fine chopped blanched almonds
♥ 1/3 cup pearl sugar
♥ 1/4 - 1/2 cup red jelly/jam
Pre heat the oven to 180 degrees
Cream the butter and sugar until fluffy
Beat in 1 egg
In a separate bowl sift flour and salt
Add it to the creamed mixture along with the nuts and pearl sugar
The dough should come cleanly away from the sides
Divide the mixture in two, cover each cling film and refrigerate for at least half an hour
Roll out pastry to 1/8th inch thick. Cut out round cookie shows, see photograph below
With the second half of the mixture repeat but this time cut out an inner circle, see below photograph for clarification.
Brush holed cookies with lightly beaten egg white and sprinkle with a little pearl sugar. Bake all cookies for 8-10 minutes or until golden
Once cooled place some of the jam on the bottom biscuits and cover with the cut out cookies. Eat and enjoy.
